And got itchy to actually “make something”. I had been eyeing some odds and ends, and some leftover ricotta from last weekend’s quichatta (which I discovered is a hybrid of a quiche and frittata) screamed
LASAGNA!!! It wasn’t completely comprised of leftovers, but I bought nothing to make it, does that make any sense? Turns out it turned out to be a puttanesca lasagna and zoinkies, impressed even myself!
I ate a slab and then portioned the rest. Some will go home with Deedles and a friend is recovering from shoulder surgery so she’ll get some too. I can cool them outside and keep them in a cooler briefly, don’t want to tax my little freezer any further, even though 3/4s of a sausage package left to be a pillar of the lasagna. Delegating my precious Maple Lane Farm meats!
That’s a whole lot more fun than just boiling, straining and reducing stock, yet without diminishing the value of high quality stock…
