The pizza station

I don’t bring my phone into work so haven’t shared images of it. During my two day shifts last week I needed my timer, so snagged a couple!

The wooden “building” peels line up in front of the ingredients, the dough balls get “spun” (visible in the lower right) and toppings go on. We have a few “house pies” or of course folks can “BYO” (Build Your Own)

Yup, we go through A LOT of pepperoni (#1 UPF?!?!)

A coworker from the FOH (Front of House, servers) asked if pizza was my favorite station. I didn’t want to pigeon hole myself so shared what I loved about it.

It’s rather linear, spin dough, build, bake (the pie then makes a U-turn to “swing hot” (the verbal call so staff knows a hot pie is coming out of the 600* oven) for cutting and dressing (a drizzle or topping before serving) then placed in the window for serving. It a little like Legos, all the parts are there, I just combine them to specification.

I mentioned that I LOVE to touch food, share meals with people, nourish them (or at least feed…) and making a “sexy as f#ck” pizza (as my pies are often described) takes craft. (Some staff in house simply throw them together, and sometimes we have to during a big push).

But YAH, I like the pizza station, I’m looking forward to it not being so hot outside and savoring the emanating heat, but it’s good! Some staff is moving on (for varied reasons) so I’ll likely be filling those gaps, prepping the station, building and cooking more, closing up less. I’m good at the latter, but prefer to build than wiping down and mopping…
